Make-Ahead Breakfast Burritos with a Low-Carb Option

What does breakfast look like in your house?  I will be the first to admit that it is often chaotic at ours.  We homeschool but I still try to stick to a fairly regular routine, plus the girls wake up STARVING.  Guess what happens when we move beyond starving?  Then it’s meltdown time!  What’s my solution?  To be PREPARED.  This means my arsenal is full of quick and easy breakfast recipes, including these make-ahead breakfast burritos.

Make ahead breakfast burritos for the busy mom. These can be made ahead and also low-carb!I have used this recipe for years, but I recently decided to attempt to make it low carb.  It was a simple task because I just had to swap out the wraps.  I will admit that I was more than a little nervous about how these would turn out after they were reheated.  To my surprise they were perfect!

So now on to the recipe.  Here’s what you need for my breakfast burritos:


  • 2lb Sausage
  • 18 Eggs
  • 1 Cup Salsa
  • 10 slices of Cheese
  • 20 Tortillas (Be sure to substitute a low carb brand, like this one, if you want a low-carb recipe)


1).  Brown & crumble 2lbs of sausage over medium heat.

2).  Whisk 18 eggs & add to skillet; stir until cooked through.

3).  Add 1 cup of salsa and mix thoroughly.

4).  Remove from heat.

5).  Add half slice of cheese to each tortilla.

6).  Add 3 heaping tablespoons of filling.

7).  Roll & wrap in wax paper and then aluminum foil.

8).  Freeze

**To reheat the breakfast burritos place each individual burrito in the microwave for approximately 45 seconds.  Top with more salsa, sour cream, or hot sauce.  Enjoy!

  1. Brown & crumbled 2lbs of sausage in a large skillet.
  2. Whisk eggs, add salt & pepper, and add to skillet.
  3. Cook until solid, stirring continually.
  4. Add 1 cup of salsa. Mix well. Remove from heat
  5. Add 1/2 slice of cheese & 3 heaping tablespoons of filling to each tortilla.
  6. Roll in wax paper and then foil. Freeze.
  7. Reheat for 45 seconds or until warm. Enjoy!
