Easy Breakfast Rice
A quick & easy
(A great way to use leftovers!)
(adjust to taste)
diced veggies (optional)
(zucchini, onions, mushrooms, whatever you have on hand)
Melt 2 Tbsp of butter in skillet over medium heat.
Add veggies (if using) and cook until soft.
Add eggs, whisk while cooking, cook through.
Add leftover rice, cook until warm.
Season with salt & pepper, add soy sauce to taste
